Salmon Cakes Sweet Potato
Used Alaskan wild salmon (fresh, then frozen for 1 week)
Pulsed sweet potatoes at high 9 on Vitamix vs. food processor. Added in other ingredients and it was pretty difficult to pulse. Bottom part ended up more blended than top part. Had to hand mix afterwards.
For Fanny's: Used Vitamix crumbled rice cakes instead of Panko. It did not hold together, especially during flipping on the pan. Eliminated garlic powder.
For regular: Much better cohesion.
Coleslaw: Used Napa cabbage. Flavor was Ok. Probably would have been better with red lettuce.
Pretty good, would eat again. The sweet potato flavor was more prominent, so it was not just salty salmon.
