Poached Boneless Chicken with Ginger Onion Dipping Sauce

INGREDIENTS
8 stalks of scallions
4-5 ginger roots
Minimal vegetable oil
Salt
2 lbs of chicken
POACHED CHICKEN
Rinse chicken
Smush 3 stalks of scallion with knife. Break them into 3 parts
Slice 1 ginger root
Add these and 1 Tbsp salt into InstaPot, set at High Pressure for 6-8 minutes. Later natural release (don't wait!).
GINGER/SCALLION SAUCE
Slice vertically 5 stalks of scallion and then slice scallions
Skin and cut ginger into small pieces
Put into food processor or mince/mix
Add salt to taste (Recipe says 1-2 Tbsp; maybe just do half 1 Tbsp)
Heat vegetable oil in pan until hot (put chopstick in and see bubbles)
Pour vegetable oil over mixture of ginger/scallions/salt and mix
